Windows 11 IoT Enterprise exists but it uses the GAC (General Availability Channel) model for updates. As of now, there is no "Windows 11 IoT LTSC" release equivalent to the Windows 10 model (though this may change with future releases like "LTSC 2024"). For maximum stability and 10-year support, Windows 10 IoT Enterprise LTSC 2021 remains the industry standard.
